 How about a delicious and quick Lemon Garlic Butter Shrimp with Asparagus? It's light, flavorful, and perfect for a summer evening. Here's how you can make it: Lemon Garlic Butter Shrimp with Asparagus Ingredients: 1 pound shrimp, peeled and deveined 1 bunch asparagus, trimmed 4 cloves garlic, minced 1 lemon (zest and juice) 3 tablespoons butter Salt and pepper, to taste Fresh parsley, chopped (for garnish) Olive oil Instructions: Prepare Asparagus: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Add asparagus spears to the skillet and season with salt and pepper. Cook for about 5-7 minutes, or until asparagus is tender-crisp. Remove from skillet and set aside. Cook Shrimp: In the same skillet, add another drizzle of olive oil if needed. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and cooked through. Combine: Reduce heat to low and add butter to the skillet. Let it melt and coat the shrimp. Add lemon zest and lemon juice to the skillet, stirring to combine everything evenly. Serve: Return the asparagus to the skillet, gently tossing to coat with the lemon garlic butter sauce.
